Chapter One

It started on a corner in Astoria.

Somedays Bakery was born from a simple belief — that the kind of bakery experience you'd find tucked into a corner in Paris, Lyon, or Barcelona belongs here too. From-scratch. Made on premise. Hand-laminated each morning.

We opened our first corner spot in Astoria, Queens in spring 2024. A small space. A serious commitment to the craft. European butter, fillings cooked down in our own kitchen, dough laminated by hand and shaped through the morning. The kind of bakery we'd been looking for ourselves and couldn't quite find.

What started as one corner spot has grown — Long Island City, Bayside, Montclair, and beyond — but the recipe hasn't changed. Each location is small by design, intentional by nature, and unmistakably Somedays.

Every box we send out is a representation of everything we stand for — made from scratch, with intention, and built to be remembered.

Chapter Two · The Craft

How we actually bake.

Hand-laminated each morning.

Every croissant, every danish, every viennoiserie pastry starts with dough laminated by hand using premium European butter. No shortcuts. No factory-frozen sheets.

Made on premise.

Fillings cooked down in our kitchen. Pastry cream from scratch. Tahini whipped with sesame brittle made the same day. That's rare — most of what's in a pastry case arrives frozen and is simply baked off.

Seed oil free.

Real butter. Real ingredients. Real coffee. Even our latte syrups are house-made, so every cup is built from the ground up — exactly the way it should be.

Chapter Three · The People

The team behind your everyday.

Founder & CEO

Peter Phillips

Peter is the founder and CEO of Somedays Bakery, with a background in real estate and construction before entering the food industry.

In 2017, he co-founded Chip City Cookies, growing it from a single 250-square-foot storefront into one of the fastest-growing specialty food brands in America — 50 locations across ten states.

Inspired by the corner bakeries of Europe, Peter launched Somedays in Astoria in 2024 in partnership with pastry chef Arlander Brown.

Chief Culinary Officer

Arlander Brown

Arlander is the Chief Culinary Officer of Somedays Bakery, with over a decade of experience in viennoiserie and French pastry. He trained in some of New York City's most respected kitchens, including Librae and Bread Story NYC.

As CCO, Arlander leads recipe development and technique across the menu — from the signature Black Sesame Tahini Croissant to the savory and seasonal program.

He has been featured on PIX11 Morning News and served as a panelist at the Chicago Baking and Pastry Forum.

Chief Operating Officer

Lorraine Palazzo

Lorraine is the Chief Operating Officer of Somedays Bakery, with over a decade of experience scaling food brands. Her career includes operational roles at Chipotle and The Kati.

As COO, Lorraine oversees operations, standards, and franchisee relationships, ensuring consistency as Somedays grows.

Before Somedays, she served as Chief Operating Officer at Chip City Cookies alongside Peter.

Chief Development Officer

Eddie Mamiye

Eddie is a commercial real estate broker with over a decade of experience in the New York City market. He is a Principal at MOD Commercial Real Estate, a full-service leasing brokerage operating across all five NYC boroughs.

As a founding partner at Somedays Bakery, Eddie serves as Chief Development Officer, overseeing site selection and real estate strategy for the brand's locations.

Before that, he was Chief Strategy Officer and Partner at Chip City Cookies alongside Peter.

Solomon Choi

Solomon Choi

1980 — 2024

Solomon was a founder, a mentor, an investor, and a true believer in the power of a great idea in the right hands.

Best known as the founder of 16 Handles — New York City's first self-serve frozen yogurt concept — he built a brand from a single storefront into an internationally recognized chain with over 40 locations. He later founded Jabba Brands, channeling two decades of food and beverage expertise into advising and investing in the next generation of food entrepreneurs.

Solomon believed in the early vision of Somedays Bakery. He saw what it could become before most, and his guidance, belief, and generosity of spirit helped lay the foundation the brand stands on today.

We lost Solomon suddenly in June 2024 at the age of 44, leaving behind his wife Hannah, their two children Jubilee and Joshua, and an industry full of people whose careers and companies were shaped by his faith in them.

Somedays was built, in part, because Solomon said it should be.

We carry him with us.
